Why would the barman say that? As far as he knows, three people are in his pub, that's all. Since none has spoken, he doesn't know they are in fact a Pakistani, a Blonde and an Irishman, nor would he necessarily classify them as such. All three could be Irish, all three could be British, or indeed any other nationality. Just because two men and a woman walk into a pub it doesn't necessarily mean it's the start of a joke, does it?

A dead or live animal is no more a document than is a piece of paper or parchment or a floppy disk. What makes them documents is the information recorded on them.

Yes. So long as the promise is well-documented and duly witnessed, the medium is irrelevant. Unlike in the case of a parchment or paper document, though, there is a risk that once the pig gets turned into ham and bacon, and its skin chopped up for purse leather, the document is lost. A similar risk of document disappearance obtains if the pig should grow wings.
