Taxes and syncing databases

Hi all,

I have a couple of stupid questions that hopefully have easy answers.

1) For some reason all the items in my database are defaulting to not having any taxes applied. Is there a quick way to reset all 20,000+ items to include tax?

2) We have a regular storefront, where the main database will reside. We also have a number of laptops that go with us to local shows. I know there is a way to set up the laptops to sync with the main database when we get back from shows, but I'm not sure where to find that information. Does anyone have any pointers on where I should be looking?

3) Speaking of shows, apparently we will be required to apply local taxes which will be different than the sales tax at the store. Is there a way to globally change taxes for time?
