I am venturing out to create a line of software applications for the small hospitality businesses, i.e. restaurants, bars, clubs, etc. I want to obtain a DBA name. When I googled the process I got what seems to be a way to to do it on a county by county basis, at least in Texas. How do I get a DBA name that is mine for a greater geographic area, at least for the whole state.

The best place to check is the Secretary of State for your state. I didn't look at the Texas site but most that I've seen give you information on setting up a business, common things to do and/or watch out for and they usually address common issues such as registering a DBA. Your state may handle it at the county level as you've mentioned above but the Secretary of State web site should be very helpful for you.

For what you are planning, it probably would be good to hire a patent/trademark attorney to run a nationwide search and clear that name before you put it out there.
