I am looking to convert groups of standard items into matrices in order that they can be displayed more efficiently in Nitrosell.
Can anyone suggest a way of doing this whilst preserving all the sales and movement data of the original items?

you dont convert them. you create a matrix, then add the existing items to the matrix.

Still one little problemwith this. When I add Standared Items to a new Matrix the supplier information is over -written - any way of preventing this from happening?

I have noticed that as well. I believe that is a bug. If you are on Maintenance, it would be woth submitting a QR on that.
I looked on Customer Source and it looks like it is resolved by hotfix #19
