Layaway/workorder difficulties

I have read many posts on this subject, some have come tantalizingly close to our scenario.

We are an Independent Garden Center, one store only.

Mr. Landscaping Company wants to purchase today (on Account) assorted items, many with the same ILC, for several jobs in his pipeline, but will be picking them up over a period of weeks.

I would like to save the entire layaway/work order & have him pay for the entire purchase

(Since the material is now off the sales floor.)

We need to know what items have left our property & when, therefore what is left should still be in our sold area.

The present paper trail has left us with a few "he said she said" situations.?

Any good ideas?
