How do I arrange my list of sizes XS, S, M, L, XL, XXL to appear in the "Quantity View" in the correct order. (Not alphabetically)

Andy, it depends how you done that if during the setup time of matrix you have specific XS,S,M,L,XL, XXL, XXXL and so on it will do and create the item in structural way else it won't. totally base on the way you created your matrix setup.
