If I enter transaction summary totals by week for the sake of speed how difficult would it be to later break them down by day or even individual order totals when we have more time?

Depends on how many individual orders are there? Entering them daily will take you 5 times longer than entering a weekly total. Great question by the way.

Do everything on Monday?
No do it on Tuesday.
On reflection, Tuesday is probably better inasmuch as Monday is often a holiday (sometimes just "observed").
Tuesday, however, is sometimes an election day ("first Tuesday after the first Monday...").
Wednesday is looking good...
Did I say Tuesday? Silly me, use Wednesday.
Then its settled Wednesday it is.
