How to handle loan transactions following data transfer

I recently converted almost 20 years of Quicken data from Q2000 for Windows to Q2006 for Mac, and am trying to clean up the partial mess that resulted. Among my problems is the fact that loan setups don't transfer in the data conversion, so I no longer have my mortgage and car loan set up. I have several years of payments already entered in the checking account register and corresponding loan registers. I'm not sure how to proceed now. Can I set up the loans again to pick up where I left off, and to use the right registers? If not, what's the best way to ensure I don't lose data when I have to start over. I tried Quicken's e-mail help, but the answer I got was completely useless (and written in incomprehensible English).
