Anybody have any idea if signing a return as the paid tax preparer, for a state legal marijuana business, is asking for trouble?

No more than signing any tax return.
Not in and of itself, but you might want to review the following court case, there is a discussion of this in the Mar/Apr 2013 issue of EA Journal (publication of the National Association of Enrolled Agents, NAEA).
