got confused with some recent posts and advice is it better to use an ATM machine for cash, as they use the official exchange rate when converting, or trusting to luck and exchanging for cash?

use an atm.
At an ATM, Nationwide will give you interbank rate, which is a good as you are going to get, and others will load it by about 2%- 3%. If you change cash, the loading will be a lot more than that.
