How do you KNOW when a cheque has cleared? Do you just wait five days and check it's still there? Does a cheque entry on your statement appear when it first goes in but disappear again if it bounces? What exactly happens???

You don't - according to other contributors to this group.
You will see a payment out of your account if it bounces.

Only by asking your bank to ask the drawee specifically if your cheque has been paid. (The drawee is the bank upon which the cheque has been drawn). Once declared as 'paid' by the drawee they cant go back on it. They can refuse to answer though.
In general this is good enough, but it isnt 100% safe.
