I have a small question about Simpy Accounting.... I have somehow set up one of my bank account as the default one to write checks from. How do I make another account the default one? Thanks! Sean.

Setup > System Settings > Linked Accounts > Payables > Payables Linked Accounts
If you have selected "Use non-accounting terms" the terminology on your screens may be different. You can view that from...

I highly recommend "Using Simply 2004 Accounting" by M. Purbhoo.
The book takes the interactive approach to learning and includes a CD with sample companies setup that allow you to work through the chapters.
