I would like to know if having headquarters with a dsl connection and dialup internet at the stores will be fast enough for rms data transfer between them.

The Head office with ADSL should be fine, I would recommend all the stores have an ADSL too, modem is too slow, the initial 401 will take for ever on modem, the inital 401 takes ages on ADSL so god help us on modem. After the initial sync the data transfer is quite reasonable for ADSL, avoid modem at all cost.
