Is it Possible? We don't do nearly what we use to do and really don't need the full blown Quickbooks but I do want to keep all the years worth of checking information. Can I do it?

Don't think this is easily accomplished.
Why don't you just keep the QB active on your system, stop using it at the end of a given month, move the beginning balances over to Quicken such as checking and go from there? You can then refer back to QB when you need information and eventually just backup it up and forget it.
