Does Quicken provide a way to track options? Or, should I simply set it up as a "stock"?

Not trying to be a pain here, but did you consult the Help file (under OPTIONS in the Index!) and see that there's a problem in the approach they suggest?
Yes it does support options. When you sell an option make sure you use the "Short Sell" and when you buy the same option back use "cover short".
