What's the most profitable way of exchanging ~20 of foreign currency (a mixture of Euro / US / Candian coins) in the UK?

Find a friend who is visiting the Eurozone, USA or Canada, and do a trade with him.
There isn't one. Foreign coins are not generally acceptable for exchange.
Many charities are very happy to accept them, and you will reap your reward in heaven.
He probably wants his reward sooner. :-)

That sounds fair enough - I notice that page talks about the campaign running in 2007 - I wonder if this Change 4 change thing is still going? Could they make any use of old French Francs I wonder? I've got a ton of them!
