Mortgage application processing

I am fairly new to this house-buying malarky and having had my decision in principle approved and selected a house and had my offer accepted (in Scotland btw) am now in the stage where the lender is "processing my application".

As I've not really found any details anywhere of what this entails - I just wondered if anyone here has a good site or would be willing to explain of what the processing actually consists of? I have heard from various people that it can take up to 6-8 weeks to process - is that realistic?

The main reason I ask is that my moving-in date has been set by the solicitor as 5th March and my financial advisor said it would be tight as to whether the lender could process it this quickly (this was last Thursday). As I am currently leasing a fairly expensive riverside property, I would like to hand in my month's notice to the leasing agency as soon as I can but at what stage would you deem it safe to do so?
