Is there a way I can create a "consent" form within each customer's profile information for me to print and for the customer's to sign?
Can you expand on that a little? Not sure what you mean by "within each customer's profile". Do you want to use a Signature Capture Device or just sign a hard copy? Do you want to print a template for the customer to sign, or the image of the signed copy? Do you want a template that gets pre-filled with the customer's name, address, etc?
The simple answer is probably that you will need an add-in to do that, but it may be very simple of very complex depending on your details...

This all applies to MS RMS. I don't know MS POS very well - not sure how much of this crosses over...
Look at the "Additional" tab of Customer Properties. You have 5 Text, 5 Number and 5 Date fields that can be entered.
Now look at Store Operations Manager, File/Configuration, Store Tab, Captions Button. Here, you can set the label that RMS will display for any of these custom fields. I would probably use a date field - set a caption to "Consent Signed On".
Now when a customer has signed a consent form, the cashier can enter the date on the Additional Tab.
You are going to need a custom application to do sig capture. RMS only does that for Tenders and frankly, the way it stores the signatures is not very useful.
