Once I've entered and commited a serial number, is there are any way I can change it later?

No, you can only delete it and re-add it with the new serial number with the standard functions of RMS.
There is an add-on from Digital Retail Solutions called the DRS Serial Editor you can get;

Hmmm... If I delete the item and then add another that will impact on the average cost etc.
And I'm not paying $299 for the ability to do it!!!
It should be a standard feature, surely?
