Is there a way to discount a non discountable item as the POS if you have proper permissions without modifying the item?
I would like for a manager to be able to override a non discountable item at the point of sale.

If an item is tagged as non discountable on the item card, then no one can discount the item, regardless of security levels. With that said - you can manipulate your security levels and stack them so that the average cashier, asst manager, etc can not change an item price, but anyone above them can. In addition to this, I think you should also start using your Reason Codes on price changes - so even when a manager changes the price, you will have a reason to pair when auditing.

Customer price matrix add in is possible way to go
I am looking into it as well as I am in a wholesale environment to where prices are specific per customer rather than perquantity
