Where can I edit the actual Z-report? I would like to remove some feilds that are not being used and also sort the departments.

You can make a backup copy and open the original in notepad, edit it, and then reset the template.
It can be found in:
C:\Microsoft Retail Management System\Store Operations\Receipt Templates
if you used all the default settings. X/Z report is in XReport.xml
