Is there a way to add sales tax for items used for personal use or taxable company use? The only way I can think of is to create an invoice to sell the items to myself.

Not to my knowledge. As for invoicing yourself, that will play around with your A/R. We keep track in Excel and enter the balances each month by General Journal Entry.
