Sales tax in my area will be changing next week and I know who to change it, but is there away to change it before the June 1st date but still have QB use the current numbers and then switch itself automatically to new rates?

No. You have two options. Either change the sales tax item on June 1st or create a second sales tax item now, reflecting the new rate, and then delete or make inactive the old item on June 1st.
