Is there a way for a default city to come up when entering a new customer. We do business in a city with a long name and would like the system to default a city and state when left blank.

By default, RMS will tab to the zip code field before the city field. After you have populated the city for the first time it will become automatic after you enter the zip on subsequent entries.

I realize that, because we are in Canada with hundreds of postal codes in even a small city, it will be unusual that the same postal code gets used twice. Is there any way to set up a default city other than this way? Thanks,

Try making up a dummy account for each city, or at least each city with a long name. You can give them "z-" prefix so they'll sort to the end of the list. Any way, only put the first part of your postal code in each one. So for Moose Jaw, Saskatchewan only insert the "S6H". You'll have to remember not to fill in the suffix on new accounts until after the city, province auto populate, then finish the Postal Code.
It's a work around but saves the typing.
