Does anyone know if Stirling postal orders from UK post offices can readily be cashed into Euros in Eire?

Anyway, I would think it extremely unlikely, (certainly without significant overhead anyway), I would suggest for low value amounts, send cash, or even something like an Amazon voucher.

British Postal Orders can be cashed at post offices in many countries around the world, but unfortunately for you Eire is not one of them.
