I need to be able to have a copy that the customer will sign and one to give the customer. Is it possible without changing all the tender type receipts? Or driving the cashier crazy by having to do a look up in the journal to re-pprint?

Just check the Require Signature for the Tender Type(s) you want, then z-out the POS(s).
