Is there a way to add additional columns to the Attributes of the Matrix item? Such as weight, add or remove from website, etc.

Are you talking about going in through the properties of the Matrix item then clicking on the Attributes button and adding more columns to there? If so then you can not. If you feel these should be added then you should make a Product Suggestion. Otherwise contact RMS Store
