Is there a way to view past transactions sorted by time of day? I'm trying to get a grip on both my busiest hours and what items are selling at what times?

For sales revenue and customer counts by hour try Shift-F6 on the RMS POS window. For item sales, ask your RMS partner for the "Detailed Sales by Hour" report from the Partner Source Report Library.
