It's called "Reports". Specify the date range that you wish for each report. If this is a Basic version you can only print the reports; Pro versions can also export the reports to Excel.
Thank you -- this is the pro version -- So; once the data is in excel for a given date range; how do I delete everything & pull back in that specific date range?
Basically he's being audited for a 3 year period, they want the data in quickbooks format (or peachtree etc); so he wants to pull everything else out of the data file and provide them with only the requested information (date range).

Sorry, I misunderstood. Are you certain that's what is required? A QuickBooks file containing data from only the selected date range? (1) That seems a highly unusual request. (2) I don't know any accounting software that can do that.

We have this type of request all the time from Florida Unemployment people. We offer them a complete QB data file, plus the ledgers (or transaction detail reports) for the specific period requested. No one ever took a file from us. Then again, we do not have state income tax and our franchise tax does not apply to S corps.
