To my knowledge, she does not have a multi user license, but currently has the program installed on two machines. So, my question is: can I install her program on my laptop in order to work on her data file from home without her needing to purchase a multi user license for that third machine (mine.)?

To answer your question - you CAN install her program on your laptop to work on her data file from home - nothing in the software itself will prevent it.
