Yes, there is a way. The default search field is the one the cursor is in when you hit Ctrl-F. Just place the cursor in the field you want to search, hit Ctrl-F and start typing search criteria.

How do you find the "payee" in the "category" list?

If you want a list of transactions for a category in a transaction in a register, you can right click the category field of the transaction and select "Amount spent on xxxxx" (or click the tiny "report" icon to the right of the category field.

You can right click on the payee name in the transaction in the register and select "Payments made to yyyyy" (or click the tiny "report" icon to the right of the payee field).

These reports will be for all accounts, but easy enough to select on, or subtotal by, account, if needed.

Or, for payees with transactions only in the one account; you can sort the register by payee.
