We are talking about texts rather than phone calls so I would have thought that T-Mobile have copies of all texts sent via their network. They could send me a copy of the relevant texts.

I've noticed a distinct change in recent years. In the past (>5 years ago) a suitably worded letter to someone senior in the company would elicit apologies and a good offer. Nowadays only court action seems to work. I never had to sue anyone until about 4 years ago and they did not even defend the case, just paid up.
I have two disputes ongoing right now that are likely to lead to court action by myself. One is so simple and clear cut it should never have got to this stage.

I doubt that T-mobile would keep copies of the actual texts. They are obliged by law to keep records of the numbers called though.

Fine by me. The onus is on them to show me evidence I agreed to a charge.
