How can I track employee discounts in a Department without having to add every single item to the department. Currently, I have a set customer called Employee discounts and it is set to 50% off, However, when I run my Z report, I can't see how many discounts were used by just employees?

You won't be able to see that on a Z-Report. In RMS, the Z-Report is really only useful for managing & reconciling the cash drawers. Any analytical information is provided in other reports in SO Manager. In this case, you could use a detailed sales report grouped by customer account number.
