I am using Premier 2004 I added a custom field in items, it shows in both columns and filters, however, when I select it, it doesn't show the information in that custom field nor can I filter in a sales report.

What report? In order to filter a transaction report for a field, that field must actually be used in transactions. For example if you add the "Colour" field to Invoices and enter a value in that field on your invoices, you can filter for it in a Sales by Item report.

Go for Sales by Item/ Sales by Customer 'Detail' report.
