I have a client who wants two checkout stations (with RMS). THey would be within 15 feet of each other. What is the best way to connect these in order to maintain optimum performance on the computer that does not host the database?

Where is the DB going to be - on one of the POS computers. If yes, you can use a cross-over cable to connect the two computer together. If no, you will need a switch or router depending whether you will also be connecting the computers to the internet. Wireless connection is not advisable - for security and reliability reason.
Best performance - One DB computer, Switch and two POS computers. Small shop one POS with main DB and another POS with an off-line DB.
Most important aspect is to develop a proper backup routine and have proper UPS's for the DB unit and POS.
And if the DB is on a 3rd computer, you can add a network card to this computer and connect bot of the pos to this computer using cross-over cables.
... If you realllllllllllllllllllllllly don't wanna buy a switch lol
