Running into issues trying to get this to work w/ RMS...is there any "quick & dirty" way to just get it working (either using windows or OPOS, whichever is easier!)

Don't try and let Windows install the driver, download and install the Epson Advanced Printer Driver for windows. I have found that is the easiest way.
